Scotsman Refrigeration Systems

Scotsman’s refrigeration systems that create ice for use in beverages and food are typically the same as other refrigeration systems, with a few modifications. The most common type of ice machine uses a vapor-compression refrigeration system. This system has a compressor, condenser, evaporator, and metering device. The compressor pressurizes the refrigerant, which causes it to heat up. The hot refrigerant then passes through the condenser, where it gives up its heat and turns back into a liquid. The liquid refrigerant then passes through the metering device, controlling refrigerant flow into the evaporator.

The Specialty Evaporator

Manufacturers build different arrangements of evaporators that range in cube size and number of evaporators contained in a single machine. Multiple evaporators increase the overall production capacity owing to larger freezing surfaces. Variations are available in a wide range of cube sizes, but the basic evaporator designs are closely related. The evaporator is where the magic happens. The refrigerant passes through the metering device – thermostatic expansion valve (TXV) into the coils in the evaporator, absorbing heat from the water circulating over or through it. This process results in the circulating water being continuously cooled to freezing temperature. The refrigerant turns to a  gas and passes back into the compressor. The gas is compressed again, which causes it to heat up and start the cycle all over again. Many malfunctions cause the ice machine to lose production and possibly fail. The refrigerant charge is not likely to be the failure cause if the ice machine has been running well. The factory’s unitary (self-contained) ice machine refrigerant charge is not suspect as long as the refrigerant system has not been affected by the connection of refrigerant charging manifolds!

The Water System

Most cube ice machines also have an electrically-powered water pump, which circulates water through the machine. The first ingredient of ice is water, so the cleanliness of the water system is critical to operation and consumer health.

The flake and nugget ice machine uses a cylinder evaporator that freezes the ice to the internal walls, then scraps it off with an auger. The refrigeration cycle is basically the same, except the flake and nugget ice machines do not require separate defrost (harvest) cycles.

There are many nuances between the refrigerant and electrical systems between the Scotsman unitary and split system versions.

Scotsman Sequence of Operation

The electrical sequence of operation is a crucial part of any refrigeration system, including ice machines. The sequence of operation is a set of instructions or control actions that sequences the controls and cycles in the correct order. Controls when the different components of the system are turned on and off. The control board is responsible for controlling all the other system components, including the water pump, fans, and valves. If an error occurs, the Scotsman control boards provide excellent feedback for the technician. This feedback ensures that the system operates smoothly and efficiently and that maintenance expenses are reduced.

Modern Scotsman ice machines typically have solid-state control boards to control the operation of the ice machine. The sequence of operation is typically programmed into a microcontroller on the control boards. This microcontroller interprets signals from switches and sensors in the system and executes the system’s sequence of operations accordingly.

Purging empties and then flushes the ice machine water system at particular points in the sequence of operation. Some aspects of the Scotsman ice machine sequence of operation can be modified to meet the user’s needs and the business requirements, such as adjusting the purge cycle length. This process is a standard variable owing to the local water conditions. If a high-end filtration system is used, the purge cycle can be decreased, saving water. The opposite is also true if a minimal filtration system is used.

Cleaning and Maintenance

The periodic cleaning and maintenance required on the ice machine depend on the type of machine you have. Most ice machines require basic cleanings, such as wiping down the machine’s exterior to preserve its hygienic appearance. However, Scotsman ice machines require more extensive maintenance, such as descaling and sanitizing the machine every few months.

The periodic maintenance and cleaning procedures do NOT include hooking up your refrigerant charging gauges to see what is going on under the hood. This practice does far more harm than good if the ice machines are currently operating ok. Learning the basics of production assessment and comparing the factory specification for production is the most relevant process to assess production. Production assessment assures the ice machine makes ice according to water and ambient air conditions variation.

Consult your model-specific service manual to determine what cleaning and maintenance your machine require.
